2In this Regulation
“dressed carcass” means the eviscerated carcass of any livestock dressed as may be prescribed;(carcasse habillée)
“establishment” means any enclosed place owned, controlled or operated by any operator or his agent for the purpose of slaughtering livestock and weighing dressed carcasses;(établissement)
“operator” means any person, partnership or corporation engaged in the business of slaughtering livestock to the number of three thousand in any calendar year.(exploitant)
