Equipment, utensils and food contact surfaces
31A licensee shall ensure that all equipment, utensils and food contact surfaces used on the food premises are
(a)
constructed from materials that are suitable for their intended purpose and are durable, easily cleaned and free from any undesirable substance,
(b)
in proper working order, and
(c)
operated in a manner that ensures the safe and sanitary handling of food.
