20A licensee who holds a Class 5 food premises licence shall
(a)
maintain records of preparation and processing and process control for a period of at least one year after each lot of food is released for sale, and
(b)
maintain such records so as to enable any lot of food distributed from the premises to be effectively identified and recalled.
